chili oil!

on medium high heat, bring to 330 degrees F:

  • 3 cups coconut and avocado oil blend
  • 1 cinnamon stick broken in half
  • 5 star anise

pour the hot oil over this mix (stirred throughly):

  • 2 cups crushed chili flakes
  • 2 tablespoons salt
  • 1 tablespoon ground Szechuan peppercorn
  • 1 tablespoon ground black peppercorn
  • 1 tablespoon ground paprika
  • 1 tablespoon brown sugar
  • 5 chopped green onions
  • 5 ground dried shiitake mushrooms
  • 5-10 cloves chopped garlic

stir thoroughly as the boiling oil fries the mix. then mix in:

  • 2 tablespoons chamoy
  • 2 teaspoons tamarind paste
  • 2 tablespoons black garlic paste

cover and let it cool at room temp, put a lid on. leave in on your counter.

this is the most useful condiment in our house. try it out.
