chili oil!
on medium high heat, bring to 330 degrees F:
- 3 cups coconut and avocado oil blend
- 1 cinnamon stick broken in half
- 5 star anise
pour the hot oil over this mix (stirred throughly):
- 2 cups crushed chili flakes
- 2 tablespoons salt
- 1 tablespoon ground Szechuan peppercorn
- 1 tablespoon ground black peppercorn
- 1 tablespoon ground paprika
- 1 tablespoon brown sugar
- 5 chopped green onions
- 5 ground dried shiitake mushrooms
- 5-10 cloves chopped garlic
stir thoroughly as the boiling oil fries the mix. then mix in:
- 2 tablespoons chamoy
- 2 teaspoons tamarind paste
- 2 tablespoons black garlic paste
cover and let it cool at room temp, put a lid on. leave in on your counter.
this is the most useful condiment in our house. try it out.
